Bird isn’t opposed to the concept of Ratatouille sequels, but as far as we know, he hasn’t thought of an idea for a second film yet. If he does, it’s likely that Pixar would be keen on producing it, and without a doubt, Patton Oswalt would gladly reprise his role.
